Blueberry Muffins


ingredients

¾ cup almond milk, soy milk, or skim milk

½ cup no applesauce

1 T flax seed mixed with 3 T water (or can substitute 1 egg)

2 cups whole wheat pastry flour

½ cup sugar

3 T baking powder

1 tsp salt

1 T vanilla

1 cup blueberries

 

instructions

Preheat oven to 400 degrees. Spray muffin pan or liner cups with cooking spray.

Blend wet ingredients: milk, applesauce, egg, flaxseed, and vanilla. Set aside.

Blend dry ingredients: flour, sugar, baking powder, and salt.

Fold the wet ingredients into the dry ingredients. Batter may be lumpy. Add blueberries and mix. Bake in the oven for 25-30 minutes.
