Blueberry Pie

crust

2 cups whole wheat pastry flour

2 T olive oil

1 flax egg (1 T ground flax + 3 T water)

1/4 tsp salt
 

Filling:

5 cups blueberries

1/2 cup maple sugar

1/2 cup water

Juice from one lemon

3T chia seeds

1 T arrowroot or cornstarch

1/4 tsp salt

1 tsp cinnamon

Preheat oven to 350 degrees.

Mix crust ingredients (dry then wet) in food processor until dough starts to form. Press into a glass pie dish, and bake for 9-10 minutes.

In a saucepan, combine blueberries and other filling ingredients except chia seeds and arrow root. Bring to boil, then simmer 3-5 minutes. Next add chia seeds and arrowroot, turn off heat and let it sit 5 minutes.

Pour filling into pie crust and bake for 15-20 min at 350 degrees.
