Mediterranean Dip



2 large cucumbers

1 red onion

2-3 medium or large tomatoes

1 red or green bell pepper, or both

Salt and pepper to taste

2-3 T Italian seasoning

2 T balsamic vinegar



Dice the cucumbers, red inion, tomatoes, and bell peppers. Mix in a bowl. Add 2 tablespoons balsamic vinegar and spices, and mix again. Best chilled for an hour or two.

Serve with whole corn tortilla chips or whole wheat pita bread.
