Michele's Warm Potato Salad

Serves 6-8

 

ingredients

1 lb. new red potatoes (baby potatoes)

1 lb. new white potatoes (baby potatoes)

1 bunch spring onions or scallions, chopped

½ cup finely chopped red onion

¼ cup fresh parsley, chopped

½ cup extra virgin olive oil

¼ cup apple cider vinegar

1 tbsp minced garlic

1 tbsp whole grain or coarse ground Dijon mustard

Ground black pepper to taste

 

instructions

Bring a large pot of water to a boil. Scrub potatoes, and cook in boiling water for 15-20 minutes or until fork tender. Remove from heat, and drain potatoes. In a large bowl, combine potatoes, onion, and parsley. In a small bowl, whisk together the oil, vinegar, garlic, mustard, and pepper. Pour over the potato mixture, and toss to coat. Serve while warm.

Note: If new potatoes are not available, may substitute 2 lb. red potatoes, cubed.
