Mushroom Black Bean Burger


ingredients

24 oz portobello mushrooms, rinsed and chopped

1 large onion, chopped

2 cans black beans drained and rinsed

4 cups quick oats

4 heaping T flax seed

2 T cornstarch

3 T soy sauce or Bragg's liquid aminos

2 T onion powder

1 T garlic powder

1 T pepper

Preheat the broiler.

Put a thin layer of water in a skillet, and heat on high. Once hot, saute the mushrooms and onions till onions are translucent and mushrooms are soft.

In a large mixing bowl, smash the black beans so most are mashed. Add all other ingredients, including mushrooms and onions, and mix well.

Line a baking tray with foil, and spray with cooking spray. Make patties out of the mixture, and place on the tray. Broil for 4 minutes per side, then set aside to cool.

Top with your favorite toppings, and enjoy!

Note: to store, place a piece of wax paper around each patty, and place in a storage container and freeze. Reheat in toaster oven when needed.
