No-Chicken Noodle Soup



1 onion, peeled and chopped

2-3 T low sodium vegetable base

10 carrots, peeled and sliced

4 stalks celery, sliced thin

16 oz. whole wheat orzo

1, 15 oz. can garbanzo beans, rinsed and drained

Black pepper to taste

1 bay leaf



Saute onion in a few tablespoons of water. Add more as needed until the onion is translucent and lightly browned. Fill a soup pot with 5 quarts (20 cups) of water, and add vegetable base. Add sliced carrots and celery. Bring to a boil, then add orzo and garbanzo beans. Add pepper and bay leaf. Cook 10-12 minutes, per instructions on orzo packaging. Remove bay leaf, and serve.
