1 cup whole wheat pastry flour
1 1/2 cups rolled oats
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 T cinnamon
1/2 tsp nutmeg (optional)
1/2 cup honey
1/4 cup olive oil
1/4 cup applesauce
1 Tbsp molasses
1 flax egg (1 heaping T of ground flaxseed, mixed with 3 T water)
1 tsp vanilla
1/2 cup raisins
In a large bowl, mix all the dry ingredients together.
In a medium bowl, mix all the wet ingredients together.
Mix the wet ingredients into the dry ingredients. Add the raisins and walnuts and stir. If the mixture seems too wet, add a pinch of flour.
Cool the batter for 20 minutes in the fridge.
Preheat the oven to 335 degrees. Line your baking sheet with parchment paper.
Drop batter by teaspoonfuls onto your baking sheet. Press down with a fork to ensure even cooking.
Bake for about 15-20 minutes or until golden on the bottom of the cookie.
