Roasted Asparagus

Serves 2



1 bunch fresh asparagus

1 tbsp extra virgin olive oil

1 tbsp fresh parsley, minced

Dash of ground black pepper to taste



Preheat the oven to 400 degrees F. Break off or peel the tough ends of the asparagus. Place the asparagus on a baking sheet, drizzle with olive oil, and top with parsley and a dash (or a few grinds) of black pepper. Toss to coat. Roast the asparagus for 20-25 minutes until tender.
